Quick and Easy Indian Lentil Soup

Happier Mothering = Finding new ways to cook healthy dry goods sitting in your pantry. Lentils have been in my pantry for about 6 months so I was so stoked to finally be cooking it! This recipe was adapted from the cute family over at GreenKitchenStories.com. They are definitely #familygoals and #couplegoals. So grateful for google search because that’s how I happen to stumble onto their wonderful website. Happier mothering= finding life hacks when the 1 year old refuses to be put down or wants to help cook constantly. How could I say no to: “baby help… mama, baby help, please. please… baby help…” She’s signing and is so polite… SMH

Ingredients

  • 2 tbsp extra virgin olive oil or coconut oil
  • 2 tbsp water
  • 1 sweet onion finely chopped
  • 3 cloves garlic finely chopped
  • 1 tbsp fresh ginger very finely chopped or 1 teaspoon ginger powder
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1/2 tsp ground chili powder
  • 5 regular sized carrots sliced
  • 1 cup red or yellow lentils rinsed
  • 4 cups vegetable or chicken stock
  • a pinch of Himalayan pink sea salt
  • 2-3 large tomatoes diced

Instructions

  • 1.Prepare the vegetables. Chopping by hand is probably best but if you only have one hand run it through the food processor.
  • Heat to medium high the olive oil and water in a big soup pot. Add onion, garlic, ginger and all the spices. After about a minute add the carrots and the lentils, stir it around another minute before adding the stock.
  • Let it boil on low-medium heat for 30 minutes, stir occasionally, taste the soup and add more salt and spices if needed.
  • Add the tomatoes and let it boil for 5-10 more minutes. The soup is done when the lentils are dissolved. Serve with fresh chopped cilantro on top.

Notes

Another hack is to add it all to a crock pot and leave it on high for 4 hours. Adjust thickness by boiling out water or adding stock.
