Air Fried Cucumber Squash

Also known as the Giant Vietnamese Squash
Prep Time30 minutes

Ingredients

  • 4 cups Cucumber Squash (gutted & cut to preference)
  • 1 teaspoon Sesame Oil
  • 1 tablespoon Korean Apple Cider Vinegar (or another sweet vinegar)
  • 1 pinch cayenne pepper (optional)
  • 2 pinches Himalayan Pink Salt
  • 1/2 teaspoon Grounded sweet paprika

Toppings

  • 1/2 cup roasted peanuts (freshly toasted peanuts are the best)

Instructions

  • Toss all ingredients together
  • Air fry on 390°F for 10 minutes, longer for more browned.
  • Drizzle with roasted peanuts and dressing of your choice.

Notes

Our favorite is using eel sauce and Japanese mayo.
