Air Fried Cucumber Squash
Also known as the Giant Vietnamese Squash

Cucumber Squash (gutted & cut to preference)

teaspoon
Sesame Oil

tablespoon
Korean Apple Cider Vinegar (or another sweet vinegar)

pinch
cayenne pepper (optional)

Himalayan Pink Salt
1/2
teaspoon
Grounded sweet paprika
Toppings
1/2
cup
roasted peanuts (freshly toasted peanuts are the best)
Instructions
Toss all ingredients together
Air fry on 390
°F
for 10 minutes, longer for more browned.
Drizzle with roasted peanuts and dressing of your choice.
Notes
Our favorite is using eel sauce and Japanese mayo.
